We are currently seeking an enthusiastic Food and Beverage Manager to join a stunning 4* hotel in Cape Town! EDUCATIONAL & EXPERIENCE REQUIRED Hotel Management Diploma / Degree a must Minimum 3 year's management experience in Food & Beverage Service MS Office Knowledge a must Knowledge of property management Pilot Semper and Vingcard knowledge an advantage PERFORMANCE REQUIREMENTS Attention to detail Fluent in English Flexible on all levels at all times Excellent time management skills Able to work under pressure Able to manage people effectively Good organisational skills Be able to implement and maintain standards and procedures Be able to handle complaints efficiently Maintain high standards of guest service, hygiene and HACCP.

PERSONALITY ATTRIBUTES Patience Confident Strong Minded Well groomed Out spoken Well Spoken People Pleaser Pro-Active SUMMARY / SCOPE / PURPOSE OF THE POSITION Under the direction of the Assistant General Manager, and within the limits of the hotel’s policies and procedures, To supervise and control all catering outlets including conferencing in the hotel to the required standards, within agreed budgetary limits, timeframes and parameters of the law, particularly liquor law.

DUTIES AND RESPONSIBILITIES Food & Beverage Operations :

  • To ensure the prompt and efficient service of all meals, snacks, functions and beverages to the required standards.
  • To ensure that profit margins are maintained, agreed costs are not exceeded through effective control systems
  • To ensure that restaurants and conference rooms are clean, well maintained and that table settings, including flower arrangements are impeccable.
  • To ensure that waiters are always correctly and smartly dressed, that they offer professional and courteous service to their customers.
  • To ensure that bar and storerooms are clean and stocked with the stipulated requirements.
  • To ensure that barmen / waiters are well trained, correctly and smartly dressed and serve their customers in a professional and friendly manner.
  • To ensure that room service orders are executed promptly and that they comply with the required standards.
  • To ensure that room service staff is correctly and smartly dressed and serve their customers in a professional and friendly manner.
  • To ensure the efficient running of the conferencing department and that all conference rooms, including cloakrooms, are clean and tidy and that conference function sheets are sent out to all staff weekly.
  • To act as Duty Manager when required.
  • To ensure that consumable and non-consumable goods are ordered, correctly stored and issued to the various departments. (ie. Kitchen and Bar)
  • To ensure that company and statutory hygiene standards are maintained in all areas.
  • To attend timorously to customer complaints.
  • To ensure that reports, procedures and administration requirements are timorously submitted.
  • To ensure that regular stock takes are conducted and orders placed accordingly
  • To circulate throughout all restaurants, bars and banqueting departments, maintaining a high profile with customers and staff.
  • To hold regular staff meetings.
  • To be fully aware of trends in the industry and make suggestions for improvement of the catering operation.
  • To attend meetings as required.
  • To ensure that the most suitably qualified person is appointed in the event of a vacancy wherever possible this should be a internal promotion
  • Food and Beverage Personnel :

  • To maintain appropriate standards of conduct, uniform and appearance of all front line employees.
  • To check that all staff adhere to the rules and regulations of the hotel and, if necessary, to report any shortcomings to Management.
  • To assist the Management in the identification of training needs on an on-going basis.
  • To assist with on-the- job training as required.
  • F&B Administration & Revenue Control :

  • To ensure that all necessary administrative procedures i.e. Day End etc, pertaining to your shift has been completed accurately.
  • To balance and audit all figures to finalize and close off day end
  • To ensure that all cash floats are maintained with an adequate am
