A Game Reserve in the Western Cape is looking for a creative and experienced Chef for the Lodge Kitchen. This is a live-in position and preferably a single person who is available immediately and willing to relocate to the Ceres area.

Principal Duties : As the Chef, you will be responsible for managing all aspects of the kitchen to deliver an excellent guest experience.

The Chef will also be required to ensure that all operational, quality, and administrative functions related to the kitchen are carried out efficiently and effectively.

Specifically, you will be responsible for performing the following tasks to the highest standards : Manage all aspects of the kitchen including operational, quality and administrative functionsEnsuring adequate resources are available according to business needsManage the provision of food to Food and Beverage outlets and acting to ensure compliance withcurrent legislation as requiredControl costs without compromising standards, improving gross profit margins and otherdepartmental and financial targetsEnsure team members including wait staff have an up-to-date knowledge of menu items, specialpromotions, functions and events.

Maintain good communication and work relationships in all areas of the Lodge.Supervise and coordinate activities of the team engaged in food preparation.

Understand employee positions well enough to determine appropriate replacement to fill gaps orworse case, perform duties in employees' absence.

Manage financial performance of the department so that all planning is in line with Lodge objectivesReview staffing levels to ensure that service, operational needs and financial objectives are met.

Ensure food control systems are adhered to so margins are on targetRegular review of all menus with GM and F&B Manager to confirm offerings are in line withmarket trendsBe environmentally aware including wastage managementActively seek verbal feedback from guests on a regular basis and respond to all guest queries inResponsible for doing the stock takesBaking skillsAbility to work long hoursAbility to work under pressure Please note that you will be required to relocate and this is a live-in position.
