To assist keeping food and beverage cost and quality within the set Village and Life guidelines. To source quality and cost effective ingredients as per the head chef and kitchen managers orders.

Maintain the cleanliness and order of all stores.

  • Ordering
  • Food : on Chef’s recommendations

    Beverages : on par levels

    Source best prices and quality

    Use pre numbered orders for ordering

  • Receiving SOP 10
  • Record received goods on SOP log

    Capture all invoices and credit notes

    Check temperatures of trucks and goods

    Check quantities

    Suppliers may go through kitchen to cellar as long as they are accompanied

  • Issuing
  • Food : issued as received. Responsible person to sign for received items.

    Remove hessian bags

    Beverages : on usage to outlet (par levels)

    Capture issues on micros

  • Stock takes
  • Make sure procedures are in place

    Schedule is to be sent out by the 25th of each month.

    Update prices on continuous basis

    Print stock sheets

    Fully responsible for beverage stock

  • Cost of Sale calculations
  • Calculate recharges

    Check revenues, voids, cash-ups

    Provisional costs of sales by the 10th of each month.
