Wine estate based in Stellenbosch is seeking a qualified and experienced Head Chef who will be responsible for managing all aspects of the kitchen.
Duties including menu design, food preparation, cost control, health and safety, quality control and team management. Prior experience in an upmarket environment and proven experience as a Head Chef are essential.
Responsibilities : Ability and willingness to train, mentor, manage and continually improve the kitchen team Interpersonal and communication skills are essentialLeading and training of the kitchen staff in line with the property food directive, ensuring food preparation to the highest standard.
Menu compilation and implementationEffective Kitchen Administration to minimize shortages and wastage and effective stock control, assuming full responsibility of any shortages, wastage, and variances.
To manage and monitor all costs and implement measures to control them.Attention to detail, analytical thinking, problem solving, decision making and time management are essentialSupervision of kitchen staffRequirements : 3 + Years previous Senior Sous / Head chef experience in an upmarket environmentHigh degree of self-motivation and ambitionAbility to work both independently and as part of a teamGood understanding of food and wine trends Knowledgeable in creating, implementing, and maintaining written control documentsGood understanding of stock procedures and controlGood knowledge of planning, budgeting, and departmental administrationExperienced in functions and eventsValid Driver’s LicenseKnowledgeable of all dietary and religious requirements
