Duties Key performance areas : Operating the machine that mixes ingredients of ground / minced meat, condiments, and spices to produce various types of sausages and mince.
Identifying the correct quantities of the right types of meat and other ingredients to produce the necessary meat products, in accordance with a provided formula, following company standards.
Producing fresh and spiced minced meat on a daily basis. Preparing sausage casings for filling and handing filled sausage.
Packing, wrapping and labelling mince and sausage products. Disassembling, cleaning and reassembling used equipment and machinery.
The successful candidate must have : Matric A relevant tertiary qualification will be advantageous 6 Months experience as a Meat Technician / Meat Market Gourmet Assistant Knowledge or relevant raw materials i.
e. types of meats, condiments and spices Knowledge of production standards and processes for making different types of sausages and mince Knowledge of relevant machinery and equipment functions in terms of safe use, cleaning, assembling and disassembling Knowledge of standards and processes for sorting, weighing, packaging and labelling processed meat.
